I’ve been making roasted potatoes for so long, I’m pretty sure I could do it in my sleep.
This is one of those dishes that you can simply feel the ingredients without using exact measurements. (But don’t worry, theres a recipe below.) As long as you have the right ingredients, its hard to mess up!
Here is a quick run-down of what you’ll do:
Chop up however many potatoes you need, drizzle enough oil to coat them & season them to your liking. Pop them in the oven while you’re making the rest of your dinner and pull them out right before time to serve. And just like that, you’re done.
Now lets look at it step-by-step.
I buy medium-size red potatoes by the 5-lb bag (and go through them in a week!). Be sure to wash them first. Submerging them in water is the best way to remove all dirt.
Place clean potatoes on a cutting board and cut them in half length-wise. Turn the potato cut-side down (so it doesn’t slide on you) and then cut each half into equal wedges. Getting the wedges as close to the same size as possible is best so that they cook evenly.
Toss the potatoes in a bowl and drizzle with enough olive oil to lightly coat them. Season liberally with the Essential Seasoning and stir to evenly distribute.
Pour the potatoes out onto a baking pan and spread them out so that each one is touching the surface.
Bake in a 375 degree oven for about 20 minutes, or until they’re golden brown.
We make these at least twice a week and my kids gobble them up. Spruce it up by adding in carrots & brussels, or try a fun dipping sauce.

Roasted Potato Wedges
These simple roasted potatoes are delicious and make the perfect side dish, even though they always steal the show!
- 2 lbs red potatoes medium
- 3 tbsp olive oil
- 1 tbsp Essential Seasoning (see recipe)
Preheat oven to 375 degrees F.
Cut potatoes into wedges. Start by cutting in half, then cut each half into thirds. This will vary by size of potato, but aim to make them all the same width for even cooking time.
Place wedges in a bowl and drizzle with olive oil and seasoning, stirring to coat. Spread in an even layer on a baking pan.
Bake for 20 minutes, or until wedges are golden brown.
